Horseradish and tomato fish soup

Dice the vegetables and sauté in a large pan with a little olive oil.

Pour the vegetable bouillon into the pan with 500 ml water and add the bay leaf. Bring the soup to the boil.

Reduce the heat to medium and simmer the soup for about 15-20 minutes until the vegetables are soft. (Check the potatoes in between to make sure they are cooked). Remove the bay leaf.

Cut the herring fillets into small pieces and add to the soup together with the horseradish sauce. Then puree the soup.

Season with salt and pepper to taste.
