Fried herring towers with apple and potato puree and pepper sauce

Preparation

Boil the potato and apple pieces in salted water for approx. 15-20 minutes. Mash with milk and butter to a creamy puree. Season to taste with salt and pepper.

Remove the fried herring fillets from the can and drain.

Heat the butter and fry the diced onion until translucent. Deglaze with the vegetable bouillon, then add the cream and mustard. Stir in the green pepper and simmer.

Arrange a layer of the puree and place the fried herring fillets on top.

Serve with pepper sauce and garnish with fried onions and fresh parsley.
