


Mediterranean-Greek fish sandwich

Preparation
Slice open the pita or olive baguette and, if desired, warm or toast it slightly so that the outside becomes crispy and the inside stays soft.
Slice the cucumber, thinly slice the red onion, and place both in the bread as a fresh base.
Carefully arrange the herring fillets in skyr sauce (½ can) on top so they are evenly distributed in the bread.
Top with crumbled feta and capers, and drizzle everything with a little lemon juice.
Finally, season with salt and pepper, press the sandwich together briefly, and serve immediately while fresh.
