Preparation
Slice open the pretzel roll and lightly toast it as desired so that it remains crispy on the outside and soft on the inside.
Spread both halves with medium-hot mustard to create a flavorful base.
Spread a layer of sauerkraut on the bottom half of the roll to add freshness and tang.
Place the trout fillets on top in rapeseed oil and arrange them evenly.
Top with chives, black pepper, and crumbled pretzels, then serve immediately.
