


The mediterranean fish sandwich – Italian style
| 1 | ciabatta |
| 1/2 | can of Appel herring fillets in tomato-mozzarella sauce arugula |
| sliced tomatoes | |
| red onions | |
| basil leaves | |
| green pesto | |
| olive oil | |
| salt, pepper |
Cut the ciabatta in half and lightly toast it, if desired, so that the outside is crispy and the inside remains soft. Then spread a little green pesto on both halves.
Wash the arugula and place it on the bottom half of the ciabatta as a fresh base. This gives the ciabatta an immediate layer of fresh, green flavor.
Arrange the tomato slices and red onion rings evenly over the arugula. Drizzle with a little olive oil and season lightly with salt.
Carefully place the herring fillets in tomato-mozzarella sauce on top and distribute them evenly.
Top with fresh basil, pepper, and a little more olive oil if desired, then assemble the ciabatta and serve immediately.
